It is simple. This is why.
SALSA
6 tomatoes (various garden or heirlooms are best)
1 bunch cilantro
1 bunch green onions
1 red onion
1 Serrano pepper
Juice of 1 lime
Himalayan or Celtic hand harvested sea salt to taste (this is key)
White pepper to taste
Rough cut (the difference between dice and rough cut is they don’t’ all have to be the same shape or size – who knew?) all tomatoes into small pieces. Chop cilantro into fine pieces. Chop green onions about mid way up the dark green stems. Dice into small pieces red onion. Mince Serrano pepper. Put in bowl and mix together with the juice of lime. Salt and Pepper to taste. If you can, chill for an hour or even over night. Serve in beautiful simple bowl, with your favorite chips, nachos, tacos, top eggs, or just grab a spoon and eat right out of the bowl. If you get bored (and I do often) and want to change it up: Add diced Mango (great over fish) or roasted corn kernels (perfect on tacos).
